Yesterday we all went to church services in our district. We had not been able to all go together as family since June. But it ended up that my husband Joe had to hitch up the horse to bring Verena and a few of the girls home early because she started with a post-concussion during services. Verena was so excited to be able to go but it seems she gets a little nervous in a group of people. This was never a problem before her brain concussion.
Because they are such good friends, she wanted her cousin Emma to come home with her too. Yesterday after church services and lunch Jacob and Emma came to pick daughter Emma up. Church lunch consisted of ham and cheese, homemade white and wheat bread, peanut butter, red beets, pickles, jam, butter, coffee and tea and four different kinds of cookies.
Jacob, Emma, and family ended up staying and playing the board game Aggravation with us. Since we have two Aggravation board games, the boys were playing their own separate game together. While everyone else was playing board games, , Kevin, 5, and Steven, age 3, were on the porch pretending to be deer hunters. Kevin came inside and told us that Steven just shot a big buck. Steven stood beside him trying not to smile. It looks so cute to see what big imaginations they have.
While we all playing Aggravation, the girls popped popcorn for everybody. Verena likes to make cheddar and sour cream popcorn but Joe and I prefer just plain popcorn. Since popcorn is one of Verena’s favorite snacks she is always making popcorn. Kevin saw some popcorn on the floor before he went to school this morning. He said “Mom I have to sweep the floor when I get back from school because someone let popcorn drop on the floor from last night.” Saturday evening when we had popcorn Lovina and Kevin were sweeping popcorn up from the floor. They felt so proud to be cleaning the house for me.
In a week shotgun season will open for the deer hunters. This is causing some excitement around here. Joe plans to try his luck this year. The windows are being looked out of to see if there are any sightings of big bucks out there. Although I am not too fond of deer meat it is always exciting to see Joe come home with one. The boys are excited to think they can go along with Joe sometime.
This week is already parent-teacher conferences reminding us that the school term is almost a third of the way through already. With having six children in school these can take up quite a bit of our time. It is nice , though, to keep up with how the children are doing in school.
For ones with excess cabbage from garden, try this recipe.
Cabbage Supreme
1 medium head of cabbage cut into 8 wedges
1/4 cup finely chopped peppers
1/8 teaspoon black pepper
1 teaspoon of salt
2 cups milk
1/4 cup finely chopped onion
1/4 cup butter
1/2 cup mayonnaise
1/2 cup shredded cheddar cheese
1/4 cup flour
In a covered Dutch oven or a large skillet, cook cabbage in a large amount of water, about 12 minutes. Then drain and place in a 13 X 9 inch baking dish. In a saucepan, cook peppers and onions and butter until tender. Blend in flour, salt, and pepper. Add milk and cook and stir until bubbly. Pour over cabbage. Bake uncovered in 375 degree oven for 20 minutes. Combine cheese and mayonnaise and spoon on wedges and bake 5 more minutes.
